Ingredients for edamame pesto |
1 lb edamame in-shell, cooked then unshelled
1/2 c grated Parmesan cheese
2-3 tbsp olive oil
1-2 garlic cloves, peeled and minced
1/4 tsp freshly ground black pepper
1/2 tsp kosher salt, or to taste
Directions
1. In the bowl of a food processor, pulse together edamame, cheese, and garlic.
2. While running, drizzle in olive oil, salt and black pepper until well combined. Less than a minute.
3. Scoop everything out into a small bowl.
Makes almost 2 cups.
